Tips and Tricks for this Cookie:
If you have time, in order to ensure thoroughly dried cherries, after draining them, wrap them in paper towels and place them in the fridge for a couple of days.
To help excess chocolate drip off, you can place the cookies on a cooling rack with a piece of wax paper underneath. When no more excess chocolate drips off the cookie, remove them from the rack and place on wax paper to finish setting.
After you wrap the dough around the cherries, roll the dough covered cherry around in your hand to make sure the cherry is completely covered and the cookie is round.
Yields: 4-5 dozen cookies
Total cookie count for the season: 380
