Buried Treasures

These confection treasures look and taste like little bites of heaven! The cherry hidden in the middle of the cookie is always a delicious surprise. There are also so many options for decoration they can make any Christmas cookie plate look extra special!

Ingredients:

  • ⅔ cup Crisco

  • ¾ cup sugar

  • 1 egg

  • 1 tbsp milk

  • 1 tsp vanilla

  • 1 ¾ cup all purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

  • ½ tsp baking soda

  • 48 maraschino cherries, drained, and dried on paper towels


For dipping

White Dipping Chocolate:

  • 1 cup white melting chocolate, cut into small pieces

  • 2 tbsp crisco

Dark Dipping Chocolate:

  • 1 cup semi-sweet chocolate chips

  • 2 tbsp crisco


Directions:

  • Preheat oven to 350 degrees

  • Cream crisco, sugar, egg, milk, and vanilla in large bowl at medium speed until well blended

  • Combine flour, baking powder, salt, and baking soda. Beat into creamed mixture at low speed

  • Divide dough into 48 equal pieces

  • Press dough into very thin layer around well-drained cherries

  • Chill in fridge for about 1 hour

  • Once chilled, place cookies on ungreased baking sheet about 2 inches apart

  • Bake ten minutes, allow to cool 1 minute on baking sheet

  • Remove from sheet to cool completely

  • For dipping chocolates: place chocolate of choice and crisco in a microwave-safe bowl and microwave in 30 second increments stirring between, repeat until smooth

  • Drop one cookie at a time into chocolate. Use fork to turn over. Cover the cookie completely in chocolate. Lift cookie out of chocolate with fork and allow excess to drip off. Place on a wax paper-lined baking sheet

  • Sprinkle whatever you want on top of cookie before chocolate sets (sprinkles, chopped nuts, coconut, etc.) 

  • Chill in fridge to set the chocolate

  • Makes about 4 dozen cookies


Tips and Tricks for this Cookie:

  • If you have time, in order to ensure thoroughly dried cherries, after draining them, wrap them in paper towels and place them in the fridge for a couple of days. 

  • To help excess chocolate drip off, you can place the cookies on a cooling rack with a piece of wax paper underneath. When no more excess chocolate drips off the cookie, remove them from the rack and place on wax paper to finish setting. 

  • After you wrap the dough around the cherries, roll the dough covered cherry around in your hand to make sure the cherry is completely covered and the cookie is round. 


Yields: 4-5 dozen cookies
