Chocolate Peppermint Cookies


Mint and chocolate are a classic combination, and this cookie has two varieties of both flavors! The dark chocolate and mint extract cookie base combined with the white chocolate and crushed peppermint decoration takes this flavor pairing to the next level! For an extra decadent treat, you can enjoy these with a mug of hot cocoa.

Ingredients:

  • 1 2/3 cups all-purpose flour

  • 1 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 1/4 cups granulated sugar

  • 3/4 cup packed light brown sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 1 tsp peppermint extract

  • 16 oz. white chocolate, broken or chopped

  • 1/4 cup finely crushed peppermint bits

Directions:

  • In a medium mixing bowl whisk together flour, cocoa powder, baking soda, and salt. Set aside

  • In the bowl of a stand mixer fitted with the paddle attachment cream together butter, granulated sugar, and brown sugar until well combined

  • Mix in eggs one at a time and then blend in vanilla extract and peppermint extract.

  • With the mixer set on low speed slowly add in the flour mixture and mix just until combined

  • Chill dough for at least one hour

When you are ready to bake:

  • Preheat oven to 350 degrees. Line baking sheets with Silpat or parchment paper.

  • Scoop dough out and shape it into 1-inch balls

  • Place dough balls on cookie sheets 2 inches apart - they will spread quite a bit in the oven

  • Bake for about 8 minutes

  • Let cool on the baking sheet for several minutes then transfer to a wire rack to cool completely

  • Once cookies are cool, melt white chocolate in a microwave-safe bowl in 30-second increments, stirring between intervals until melted and smooth

  • Dip half of each cookie in white chocolate then transfer to parchment paper and sprinkle with peppermint bits


Tips and Tricks for this Cookie:

  • We recommend using pre-crushed peppermints to make your life a little easier. You can usually find them in the sprinkle section of your local grocery store.

  • If you cannot find pre-crushed peppermints you can also use your food processor to quickly crush the candies

  • Don’t be alarmed if your cookies flatten a bit in the oven. They are meant to be thin and chewy.
