Eggnog Cookies

Eggnog is only around for a short time during the year, so we owe it to ourselves to savor its rich deliciousness in as many forms as possible while we can!  These cookies take our enjoyment of the classic Christmas flavor to another level. The soft texture is a delicate bite with a touch of cinnamon and nutmeg for warmth.  Don’t forget the glaze, and make sure you leave extra for Santa - he’s going to want to take these with him for the road!

Ingredients for Cookies:

  • 1 1/4 cups white sugar

  • 3/4 cup butter softened

  • 1/2 cup eggnog

  • 1 teaspoon vanilla extract

  • 2 egg yolks

  • 1 teaspoon nutmeg

  • 2 1/4 cups flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

Ingredients for Glaze:

  • 2 Tbsp. eggnog (more if you want a thinner glaze)

  • 1 pinch nutmeg

  • 1-2 C. powdered sugar

 

Directions for Cookies:

  • Preheat oven to 300 degrees and line pans with parchment paper.

  • Combine flour, baking powder, cinnamon and nutmeg.

  • Cream sugar and butter until light

  • Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until    smooth.

  • Add flour mixture and beat at low speed until just combined - Do not over mix

  • Spoon onto un-greased cookie sheets or parchment paper - Make the dough drops rather small; they will spread generously in the oven.

  • Sprinkle lightly with nutmeg.

  • Bake 15 to 18 minutes or until the edges barely start to brown.

 

Directions for Glaze:

  • Combine eggnog, nutmeg and 1 C. powdered sugar with a fork or whisk. Depending on how runny or thick you want your glaze, add in more powdered sugar or eggnog.

  • Glaze cooled cookies


Tips and Tricks for this Cookie: 

  • Grate fresh nutmeg for sprinkling and glaze - the extra flavor is so worth it
