Wreaths and Poinsettias

Everybody deserves a break at Christmas time, even your oven!  Why not give it a rest and let your stovetop take over while you shine like a star with these bold and beautiful treats!  These no-bake holiday goodies are so effortless, taste so delicious and make a stunning presentation.  Make them once and you’re going to want to add them to your cookie tray every Christmas!

Ingredients:

  • 1 12 oz bag marshmallows  

  • ½ C butter

  • 6 C cornflakes

  • Dash salt

  • ½ tsp vanilla (optional) 

  • Red and/or Green food coloring

  • Cinnamon button candies (wreaths)

  • Gold nonpareils or yellow jimmies (poinsettias)

 

Directions: 

  • In a large sauce, pan melt the butter along with the marshmallows over medium heat

  • When the marshmallows are thoroughly melted and butter thoroughly incorporated, add the salt and vanilla (if using) 

  • Remove mixture from heat and stir in a generous amount of food coloring (green for wreaths and red for poinsettias) 

  • Stir until the color is consistent and even

  • In a large bowl, pour the melted marshmallow mixture over the cornflakes and mix thoroughly until completely coated and color is distributed

  • Drop tablespoon mounds of mixture on lightly greased waxed paper and shape

  • Using moistened fingers, flatten the mounds slightly for poinsettias

  • For wreaths, create a small opening in the mound using your slightly moistened index finger - shape sound the opening

  • Decorate according to your taste


Tips and tricks for this cookie:

  • Working with melted marshmallow is sticky business - be sure to keep a finger bowl of water nearby and you’ll have a much easier time of the shaping  

  • Wreaths are easier to shape if you keep them small - 2-2/12 inches

  • Allow these to dry before you store them.  You can store them in layers in tins; just remember to lightly grease the wax paper between layers so they don’t stick.
